I'll be going out of town for the rest of the week and I won't be able to stick to my every 2-3 days mowing schedule. I can imagine how much my Bermuda will grow before I can get back to it. My question is, how should I go about bringing my height of cut back to where it currently is?

I'd hit it with PGR at high rate before you go. Super gradual decreases. I dont subscribe to the "1/3rd rule". At any rate it would be good to know your current HOC. If you are sub 1 inch, i'd just scalp it if its too long. Needs to be cut lower than maintenance to green up and stay green.
Mid-season HOC resets are not a big deal. They will especially happen if you are pushing growth. When you get home from your trip, scalp it one or two levels lower than your current HOC and then continue on as you have been.
